Coconut, Lime and Mint Smoothie

Summer vibes have hit me hard this month and I’m constantly searching for a light, cooling and refreshing drink to set me off to a lively start each morning or pick me up in the late afternoon. This coconut, lime and mint smoothie has been heaven sent as the gorgeous flavours transport me worlds away from the city and drop me right by a poolside with tropical fruit and sandy beaches present in abundance. Though that may not be my reality, it’s certainly an amazing feeling to get simply by whipping together a few simple ingredients in a blender. If you’re yearning for oceans and sunny skies right now, then you simply must give this a try as it’ll bring you that little bit closer to summer heaven.

Ingredients

  • 1 1/2 frozen banana
  • 2 handfuls of spinach or kale
  • A handful of fresh mint
  • Juice of 1 lime
  • 1 cup coconut milk
  • A tablespoon coconut yoghurt (optional)

Method

Simply place all the ingredients in a blender and blend until smooth. Serve and enjoy!
