Nothing screams summer like a cold smoothie loaded with tropical fruit to cool down on a scorching day. Mango is my personal favourite summer fruit as it’s so incredibly sweet and juicy and its colour is so gorgeous and bright that you feel you could be laying by the pool with the sun raining down on you while eating it. In the midst of this heat wave, I’ve been eating mango every day and while I could never tire of having this gorgeous fruit simply by itself, turning it into an even more delicious treat through blending it up with some different flavours seemed like the perfect way to bring a new dimension to my familiar favourite.
The addition of goji berries is an absolute winner as these lovely little superfoods have a slightly tart element to their flavour which bounces off the mango beautifully. The cashews and coconut yoghurt make the smoothie extra creamy so its a bit more satisfying and can be enjoyed with a spoon if that’s your preferred way of eating smoothies. The cinnamon, cardamon and ginger add the most interesting element since traditionally these flavours are very warming but with the frozen fruit they make the smoothie seem even more tropical and exciting. I’m absolutely in love with this smoothie and without a doubt you too will be very soon!
- 1 cup frozen mango chunks
- A handful of cashews
(soaked in water overnight and drained)
- 2 medjool dates
- 1 tablespoon goji berries
- 1 tablespoon vanilla coconut yoghurt
(or plain coconut yoghurt and
1/4 teaspoon vanilla powder)
- 1/2 a teaspoon ground cinnamon
- 1/2 a teaspoon cardamon seeds
- 1/4 teaspoon ground ginger
- 1/2-1 cup water
(depending on how thick you like your smoothies)
Simply place all your ingredients in a high speed blender and blend until smooth. Then transfer to a glass and enjoy!
