I’m sure many of you are either in the middle of exams or, like me, have just finished. When preparing for exams or simply going through a busy period of your life, it can be difficult to find the time to prepare nutritious meals and snacks. When I don’t have time to spend cooking, my go-to treat is brown rice cakes and peanut butter. If you’ve not tried this simple snack, you must immediately!
Last month, while I was studying, brown rice cakes with peanut butter were my saviour. But, as with anything when you’re constantly snacking on them, they ran out fast. Instead of losing “valuable” revision time by popping out to buy some more and inevitably finding some kind of distraction on the way, I decided to create a treat which resembled my new-found addiction using basic ingredients I already had. These barely took five minutes to prepare and oh my… They were good! So good that an extra batch may have been made not two days later. And no, I did not share.
Makes 10 squares
- 2 cups puffed brown rice
- 1/4 cup natural peanut butter
- 1/4 cup melted coconut oil
- 1 tablespoon date syrup
For chocolate drizzle:
- 1 tablespoon raw cacao powder
- 1 tablespoon melted coconut oil
- 1/2 tablespoon pure date syrup
Melt the coconut oil, peanut butter and date syrup in a saucepan. Combine with the puffed brown rice in a large mixing bowl and stir until well coated. Press into a baking tin and freeze for an hour.
To make the chocolate drizzle, simply melted to coconut oil and stir in the raw cacao powder and date syrup until well mixed. Remove the rice crispy treats from the freezer and drizzle the chocolate sauce over the top. Return to the freezer for ten minutes.
These treats can be kept in the freezer but taste best when stored in the fridge. Enjoy!
