Salted Caramel Stuffed Tahini Chocolate Cookies

It goes without saying that, when it comes to cookies, you can’t go far wrong with any of the chocolate variety. Whether that’s chocolate chip, chocolate dipped, double chocolate and so on, they’re all a pretty marvellous. But, add the flavour of sweet salted caramel and rich buttery tahini to the mix, the result is like nothing else. With an explosion of decadence and indulgence in every bite, these salted caramel stuffed tahini chocolate cookies surpass all expectations for the humble cookie and, also, remind us it’s most definitely what’s on the inside that counts!


Makes 20 cookies

For the caramel

  • 10 medjool dates
  • 1/2 cup almond milk
  • 1/4 teaspoon vanilla powder
  • Salt to taste

For the dough

  • 1 400g can chickpeas
  • 4 tablespoons runny tahini
  • 4 tablespoons of honey
  • 1 cup of oats
  • 1/2 cup chocolate chips (70%)
  • 1 teaspoon baking powder
  • Pinch of salt


Place your medjool dates, almond milk, vanilla powder and salt in a food processor and blend until smooth. Take a tray lined with parchment paper and spoon 20 teaspoon-sized dollops of caramel on top. Place the tray in the freezer for at least an hour (2-4 is optimal). You should be able to peel the caramel off the paper whole when ready.

Pre-heat your oven to 180°C.

Place your oats in a food processor and grind until a flour forms. Then add the chickpeas, tahini, honey, salt and baking powder and blend again. Transfer to a bowl and stir in the chocolate chips.

Retrieve your caramel from the freezer. Take a tablespoon of the dough and roll into a ball. Flatten into a cookie shape, then place the caramel in the centre. Roll again so that the caramel is encased in the dough. Flatten again into a cookie shape then place on a lined baking tray. Repeat with the rest of the mixture.

Place the cookies in the oven for 15-20 minutes, until firm and slightly cracked on the outside. Then allow to cool for a further 10 minutes to allow them to set before pulling apart, unleashing all that caramel goodness and munching to your heart’s content. Enjoy!
