Sweet Miso Bircher Muesli with Stewed Plums and Pistachios

I have a habit of getting a little weird and whacky when coming up with recipes. If you were to look through the extensive list of ideas in my phone notes, you’d see that conventonal combinations are not usually on my mind when developing treats. A favourite condiment of mine? Miso paste. Usually used in a variety of savoury dishes, I’ve found that the salty heart of this ingredient actually brings a beautiful flavour when paired with sweet too. My miso caramel brownies remain one of my most exciting dessert creations to date and I wanted to capture that in a new way at the breakfast table too. With this sweet miso bircher muesli, the ingredient takes on a slightly less decadent but nonetheless wonderful total taste sensation. Paired with grated apple, stewed plums, peanut butter and pistachios, you get an incredible combination of flavours that will transform your start to the day.

Ingredients

Serves 2

  • 1 medium red apple
  • 1 cup jumbo rolled oats
  • 1 cup cashew or almond milk
  • 2 small plums
  • 2 teaspoons chia seeds
  • 3 teaspoons sweet white miso paste
  • 1/2 teaspoon vanilla powder
  • A pinch of ground ginger
  • A handful of crushed pistachios
  • 2 teaspoons peanut or almond butter

Method

Coarsely grate your apple and place in a bowl with the oats, milk, chia seeds, miso paste, 2/3 of the pistachios vanilla and ginger. Mix everything together. Cover and place in the fridge to soak and thicken overnight (around 8 hours).

Either the night before or in the morning, slice your plums into small chunks, removing the stone. Place them in a small saucepan with a dash of water and heat on the stove for 10 minutes, until soft. Use a fork to gently mash the plums. If you are stewing the plums the night before, store in a container separate from the bircher and top in the morning.

In the morning, split the bircher between two bowls and top each with half of the stewed plums. Sprinkle the rest of the pistachios over the top and add a teaspoon of nut butter on each. Enjoy!
